Ingredients:

Leftover jambalaya

4 large bell peppers (any color)

1 cup shredded cheddar cheese

1/4 cup bread crumbs

Fresh parsley, chopped (for garnish)

Instructions:

1 Preheat your oven to 375°F (190°C).

2 Cut the tops off the bell peppers and remove the seeds and membranes. Rinse the

peppers and set them aside.

3 In a mixing bowl, combine the leftover jambalaya with half of the shredded

cheddar cheese. Mix well until everything is evenly combined.

4 Stuff each bell pepper with the jambalaya mixture, packing it in tightly.

5 Place the stuffed bell peppers in a baking dish. Sprinkle the remaining shredded

cheddar cheese on top of each pepper, followed by a sprinkle of bread crumbs.

6 Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes,

or until the peppers are tender and the cheese is melted and bubbly.

7 Remove the foil and continue baking for an additional 5 minutes to allow the

bread crumbs to turn golden brown.

8 Once done, remove from the oven and let the stuffed bell peppers cool for a few

minutes. Garnish with chopped fresh parsley.
