Jambalaya Peppers

Spicy leftover Jambalaya stuffed into colorful bell peppers

How about transforming your leftover jambalaya into a delicious Jambalaya Stuffed Bell Pepper recipe?

Here's a creative way to repurpose your leftovers:

Leftover jambalaya

4 large bell peppers (any color)

1 cup shredded cheddar cheese

1/4 cup bread crumbs

Fresh parsley, chopped (for garnish)

1 Preheat your oven to 375°F (190°C).

2 Cut the tops off the bell peppers and remove the seeds and membranes. Rinse the

peppers and set them aside.

3 In a mixing bowl, combine the leftover jambalaya with half of the shredded

cheddar cheese. Mix well until everything is evenly combined.

4 Stuff each bell pepper with the jambalaya mixture, packing it in tightly.

5 Place the stuffed bell peppers in a baking dish. Sprinkle the remaining shredded

cheddar cheese on top of each pepper, followed by a sprinkle of bread crumbs.

6 Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes,

or until the peppers are tender and the cheese is melted and bubbly.

7 Remove the foil and continue baking for an additional 5 minutes to allow the

bread crumbs to turn golden brown.

8 Once done, remove from the oven and let the stuffed bell peppers cool for a few

minutes. Garnish with chopped fresh parsley.

9 Serve the Jambalaya Stuffed Bell Peppers as a main course or a side dish. Enjoy!

This recipe is a great way to reinvent your leftover jambalaya and add some extra flavor and

texture to the dish. The combination of the jambalaya flavors with the roasted bell pepper and

melted cheese creates a delicious and satisfying meal.
