Cheesy Rib Stuffed Potatoes

BBQ ribs shredded and stuffed into leftover baked potatoes!


Ingredients:

• Leftover BBQ ribs, shredded

• 4 large baking potatoes

• 1 cup shredded cheddar cheese

• 1/2 cup sour cream

• 1/4 cup chopped green onions

• Salt and pepper to taste

• BBQ sauce for serving

Instructions:

1 Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly and pierce

them with a fork in several places. Place them directly on the oven rack and bake for about 45-60

minutes until tender.

2 While the potatoes are baking, prepare the filling. In a bowl, combine the

shredded ribs with a generous amount of your favorite BBQ sauce. Mix well to coat the meat.

3 Once the potatoes are cooked, remove them from the oven and let them cool

slightly until they are safe to handle. Slice off the top of each potato lengthwise, then use a spoon

to scoop out most of the potato flesh, leaving a thin layer attached to the skin. Reserve the

scooped-out potato flesh for another use (such as mashed potatoes).

4 Place the hollowed-out potato shells on a baking sheet lined with parchment

paper. Season the inside of each potato shell with salt and pepper to taste.

5 Fill each potato shell with a generous amount of the shredded BBQ ribs. Top with

shredded cheddar cheese, making sure to cover the meat completely.

6 Place the stuffed potatoes back into the oven and bake for an additional 10-15

minutes, or until the cheese is melted and bubbly.

7 Remove the potatoes from the oven and let them cool slightly. Garnish with sour

cream and chopped green onions. Serve with additional BBQ sauce on the side.
